FRUIT PIZZA (submitted by Beth, our Newsletter Editor)
I thought for our summer newsletter that I would share one of my favorite hot weather desserts. This has been a hit with all of my family and friends, and hopefully it will be with yours as well!
1 package of sugar cookie dough
1 8 ounce package of cream cheese
1/3 cup of sugar
2 cups of fruit (berries, kiwi, etc)
Roll out the cookie dough on a pizza baking sheet. (I prefer the kind you can throw away afterward.) Bake as per the instructions on the package, until the cookie is golden brown. Allow to cool. Soften the cream cheese. Mix the cream cheese and sugar. Spread the mixture on the cookie pizza crust. Cut up the fruit and spread evenly over the top of the pizza. Enjoy!!
* A good way to decrease the calories for this dessert is to replace the sugar with Splenda or Truvia and to use light cream cheese.
